How We Found Out..../Diabetes, Faith and Food

On Oct 31, 2012 we attended our churches Harvest Festival. Ryan, our usually strong willed, happy go lucky, loud child was lethargic.  We had been to the Dr. a few days before and they diagnosed him with an ear infection, and sent us home with an antibiotic. We returned to the doctor on November 2, 2012.  They immediately sent us to the local Children's Hospital.
 Before any of the test results returned the hospital staff and the emergency room doctor told us."There is no disease that would make someones blood sugar spike besides Type 1 Diabetes."  Our hearts sank and our stomachs turned inside out.  Which little did we know it would be a representation of our new life.  Even though, I knew our life was going to be turned inside.  I had a sense of peace and comfort that this was not going to define us.  I pray you continue to read each day. This part of the story I know that most of you know.  I know that each day you will be comforted and strengthened from each entry.

****I am putting information about the carbohydrates.  That is all I think about now. I have to determine how many carbohydrates he has eaten, and give him insulin to corrects it. His body no longer breaks down his sugars and transports to energy to his organs that his body needs function.
1/3 cup of  pasta has 15 carbohydrates.  1/2 cup of spaghetti sauce has 8 Carbohydrates.  The rest of the ingredients do not have carbohydrates.

                                        The "Pasta Dish"
This dish is so popular we  cannot put into words how to describe it.  So we just call it the "Pasta Dish".
                            1 bag of pepperoni or turkey pepperoni
                            8 oz of cream cheese
                            1 jar of spaghetti sauce (meat sauce flavor)
                            1 8oz bag of mozzarella cheese
                            8 oz Pork breakfast sausage
                            1 box of whole wheat or white rotini

Preheat oven to 350 
Prepare the rotini pasta according to the directions on the box. Cream cheese should be at room temperature.
Brown 8 oz of breakfast sausage.  Pour cooked pasta rotini past into a 2.8 liter casserole dish.  Mix room temperature cream cheese throughout the pasta.

I usually tear the pepperoni(I use half the bag) into half pieces an mix throughout the pasta. Mix browned breakfast sausage throughout the pasta.

 Add and mix spaghetti sauce and 1/2 the bag of mozzarella cheese throughout the pasta

.  Cover the top of the "Pasta Dish" with the rest of the mozzarella cheese. 

                                                                     Oven Ready!

 Cook at 350 for 30 tp 45 minutes or until the edges of dish is brown and crispy.

Eat with garlic bread and salad.  I promise you will enjoy!
